Ingredients:
Grated bottle gourd – 5 ½ cups
Onion (Finely chopped) – 5
Rice flour – 3 ½ cups
Chana dal (Split Bengal gram) – ½ cup
Coriander leaves (chopped) – 1 bunch
Curry leaves (chopped) – 4 sprigs
Green chilies or dry red chilies (coarsely ground) – 10
Ginger (coarsely grinded) – 1-inch piece
Salt – as required
Coconut oil – for deep frying
Method:
Soak chana dal for 2 hours. Then mix together grated bottle gourd, soaked chana dal, ground green chili, ginger, salt, coriander leaves, and curry leaves. Then add a little rice flour and mix. Then add a little more flour and mix again. Keep adding the rice flour and keep mixing. Then take a little mixture and form a small ball. Then press the ball on a banana leaf and form like a round disc or patty. Then heat oil in a kadai/pan and drop the ready Vadas. Fry until they turn golden brown. Fry in batches until all the bottle gourd mixture is finished. Serve hot.
