Giant Taro Plant and Tubers
Ingredients:
Giant Taro - 1/2 kg
Water - as required
Salt - as required
Chili powder - 1/2 teaspoon
Garam Masala - 1/4 teaspoon
Lemon Juice - 1 teaspoon
Rice rava - 1/2 cup
Coconut oil - for frying
Method:
Peel the taro and wash it. Then, slice it into quarter inch thick discs. Put them in a vessel and add water until they submerge. Boil until the taro slices are cooked. Then, remove them from the water and let them cool a little. Sprinkle salt, chili powder, garam masala and lemon juice on the cooked taro slices. Marinate for 1 hour. Then, heat a tawa and drizzle few drops of coconut oil on it. Press a marinated taro slice in rice rava on both sides and place it on the hot tawa. Fry it on both sides until slightly golden brown. Keep drizzling few drops of oil around the edges now and then. You can fry 2-3 taro slices in one batch, depending on the size of the tawa. Serve hot along with mint chutney or tomato sauce.
