Ingredients:
Elephant foot yam – ¼ kg
Onion (chopped) – 2 medium
Garam masala powder – 1 teaspoon
Chili powder – ½ teaspoon
Turmeric powder – ¼ teaspoon
Salt – as required
Oil – for deep frying
Method:
Peel the elephant foot yam and wash it. Then boil the whole elephant foot yam in pressure cooker for 3 whistles. After boiling, chop half of the elephant foot yam into small cubes. Take the other half of the elephant foot yam and mash in coarsely. Heat enough oil for deep frying in a kadai or pan. Gently drop the chopped elephant foot yam and fry until golden brown. Once fried, remove from the oil and set aside. Now fry the mashed part also until golden brown. Remove from the oil and add into the fried elephant foot yam pieces. If there is still oil left in the pan, add chopped onions into it. If oil is not there, add 1 tablespoon. Fry the onion until golden brown. Then add deep fried elephant foot yam. Saute for 3 minutes. Add salt, turmeric powder, chili powder and garam masala powder. Mix well and turn off the stove. Serve as a side dish with rice and sambar or rasam.
