Ingredients:
Whole wheat flour - 2 cups
Fine Rice rava - 1/4 cup
Carom seeds - 1/2 teaspoon
Salt - 1/2 teaspoon
Coconut oil - 2 tablespoons + for deep frying
Water - as required
Method:
In a large mixing bowl, add whole wheat flour, fine rice rava, carom seeds and salt. Mix well and add 2 tablespoons of coconut oil. Mix until the oil combines well. Then knead into a soft and firm dough by adding water as required. Divide the dough into 5 portions. Dust some flour on a clean wooden or stone surface. Take one portion of the dough and roll into a roti. The thickness should be as of poori or a little thicker than chapati. Prick the roti with a fork to prevent the papdi from puffing up. Using a cookie cutter, cut the roti into small round shapes (2 inch diameter). Heat coconut oil in a kadai or pan. Fry the papdi in medium hot oil on low flame. Fry them until slighly golden brown and crisp. Do the same process with the rest of the dough. Once the fried papdi have cooled completely, store in an airtight container. Serve as a tea time snack or prepare Papdi Chaat.
