COLOURFUL IDLIS

Cuisine: South Indian







Ingredients:

Idli batter (Made with red rice rava only) – 16 cups (Makes 25 idlis, 5 idlis per colour)

For yellow colour: Turmeric powder – 2 tsp

For purple colour: Red colour hibiscus flowers – 5

For blue colour: Butterfly pea flowers – 20

For green colour: Spinach – ½ bunch




Method:

Grind hibiscus flower petals, butterfly pea flowers and spinach leaves separately. Put all three pastes in 3 different bowls and add a little Idli Batter in all three bowls and mix well until everything combines. Then in another bowl, put turmeric powder and add a little idli batter into it and mix well. Now 4 colours of idli batters are ready. For the fifth colour, you can just make idlis with plain ‘red rice rawa’ idli batter. Now take the idli steamer and put 5-6 cups of water depending upon the size of the pot. Then take the idli mold plates and moisten them. Pour the 5 different coloured batters into different moulds of the idli plates. Put these filled plates into the idli pot and close the lid. Steam for 10 minutes and turn off the flame. Leave it for 5 minutes and open the lid. Moisten a spoon and remove the idlis from the moulds. Serve Colourful Idlis hot with chutney.
