Ingredients:
Avalakki / Poha / flattened or beaten rice (made with brown rice or red rice) - 2 cups
Coconut oil - 4 tablespoons
Chana dal (split Bengal gram) - 1/2 teaspoon
Urad dal (split Black gram) - 1/2 teaspoon
Groundnuts - 1 teaspoon
Mustard seeds - 1/4 teaspoon
Cumin seeds - 1/4 teaspoon
Curry leaf - 1 sprig
Onion (chopped) - 3
Green chilies (slit) - 5
Tomato (chopped) - 2
Salt - as required
Turmeric powder - 1/4 teaspoon
Coriander leaves - 1 tablespoon
Shredded fresh coconut - 1 tablespoon
Lemon juice (optional) - 1 teaspoon
Method:
Firstly, chop the onions, green chilies and tomatoes. Then, wash the Poha thoroughly and soak in water. Heat coconut oil in a pan and add chana dal and urad dal. Saute for half a minute and add groundnuts, mustard seeds and cumin seeds. Saute until they start to crackle. Then add curry leaves and green chilies. Fry for few seconds and add chopped onion. Fry until onion turns golden brown. Then add chopped tomatoes. Cook until soft and add salt and turmeric powder. Drain the water from the soaked poha and squeeze them gently with your palms to remove excess water. Add the squeezed poha to the pan. Mix until everything combines well. Cook on low flame until the poha is warm enough. Add lemon juice and mix. Sprinkle coriander leaves and shredded fresh coconut. Serve hot along with Lemon Pickle.
