SOUTHEKAYI DOSE | CUCUMBER DOSA




Cuisine: Karnataka state of India








Ingredients:

Brown rice - 2 cups

Cucumber (chopped along with the peel) - 1 cup

Cooked brown rice - 1 cup

Salt - as required

Water - as required

Coconut oil - for frying the dosas




Method:

Wash the brown rice and soak in water for 4 hours. Then, grind the cucumber pieces into a fine paste along with little water. Add soaked rice, cooked rice and salt to the same blender jar. Add some water and grind into a smooth batter. Transfer the batter into a vessel and cover with the lid. Ferment the batter for 8-10 hours or overnight. After the fermentation, check the consistency of the batter and add water if required. Heat dosa tawa / griddle and pour a ladle of dosa batter on the center of the tawa/pan. Spread it slightly with the ladle. The dosa must be medium thick. Drizzle little coconut oil around the edges. Once the dosa turns slightly brownish, remove from the tawa. There is not need to fry the dosa on the other side. Serve Cucumber Dosa hot along with coconut chutney or onion chutney.
