STUFFED TOMATO SALAD

Ingredients:

Tomatoes – 10 small sized

Shredded fresh coconut – 1/3 Coconut

Grated Carrots – 4

Jaggery – 3 teaspoons

Grated Indian gooseberry (Amla) – 5 teaspoons

Coriander leaves (Chopped) – 1 tablespoon

Green chilies (Chopped) – 5

Salt – as required

Raisins – 3 teaspoons

Chopped Cashews – 3 teaspoons

Sesame seeds – 2 tablespoons




Method:

Wash the tomatoes and dry them completely. Make a small hole in the top of the tomato and scoop out the seeds. In a bowl, mix all the other ingredients together. Stuff that mixture into the tomato to the brim. Garnish with coriander and serve.
