RAW PAPAYA SALAD

Ingredients:

Raw papaya (very slightly riped) – 1 medium

Onion – 1

Green chilli – 2

Carrots – 2

Coriander leaves – ¼ bunch

Salt – as required

Chopped cashew nuts – 3 teaspoons

Lemon juice – 1 tablespoon

Butterfly pea flowers or Red Hibiscus flowers – 6





Method:

Peel and chop raw papaya into small pieces. Chop the onions and green chillies into small pieces. Grate the carrots. In a mixing bowl, mix together the chopped papaya, green chillies, onion, cashew nuts, coriander leaves, grated carrots, salt and lemon juice. Garnish with some flower petals (butterfly pea or red hibiscus) and coriander leaves. Serve as a side dish.
