BANANA PANCAKES

Ingredients:

Ripe Bananas – 2 small

Whole wheat flour – 2 cups

Jaggery – 1 teaspoon

Water – as required

Coconut oil – for frying

Honey (optional) - as required




Method:

Start by peeling and mashing the bananas in a bowl. Once mashed without lumps, add whole wheat flour, jaggery, and water to the bowl and mix everything together until you have a smooth batter. Ensure there are no lumps in the mixture. The consistency should be thicker than the dosa batter. Next, heat a dosa tawa or griddle and pour a ladle full of batter in the center of the tawa, and spread it evenly in a circular shape using the ladle. Drizzle a little oil around the edges of the pancake and cook on medium flame. After 1-2 minutes, flip the pancake to the other side and cook for another minute. Once done, remove the pancake from the tawa and pour honey on top of it before serving hot. Enjoy the delicious pancakes made from ripe bananas.
