LEMON AMMINI KOZHUKATTAI

Lemon Ammini Kozhukattai are offered as Naivedyam for Lord Ganesha on Ganesha Chaturthi Festival.

INGREDIENTS:
Rice flour – 2 cups
Water – 3 cups
Salt – as required
Sesame oil – 2 tablespoons
Mustard seeds – 1 teaspoon
Sesame seeds – 2 teaspoons
Turmeric powder – ½ teaspoon
Curry leaves (chopped) – 2 teaspoons
Lemon juice – 3 teaspoons
METHOD:
Boil water in a heavy-bottomed vessel.
Once the water comes to a vigorous boil, add the rice flour and salt. Mix well until there is no dry flour remaining.
Turn off the stove and allow the mixture to cool slightly.
While the dough is still warm, knead it until soft and lump-free.
Lightly grease your palms with oil and shape the dough into marble-sized balls.
Place the rice flour balls in a steamer and steam for 10 minutes.
Heat oil in a kadai or pan for the tempering. Add mustard seeds and sesame seeds. Once they start to splutter, add turmeric powder and curry leaves.
Add the steamed rice balls and a little salt. Mix gently and cook for a few minutes.
Turn off the stove and add the lemon juice. Mix well and serve hot.
