Cuisine: Aikanthika's own experimentation
Ingredients:
Star fruits (unripe and green) – 5
Green chillies (slit) – 10
Garlic cloves – 10
Oil – 2 tablespoons
Salt – as required
Coriander leaves – 2 tablespoons
Method:
Chop the star fruits into wedges and remove the seeds. Then cut them into medium-sized pieces. In a kadai/pan, heat oil and fry the green chillies. Once they are fried, remove them from the oil and set them aside. In the same oil, add the star fruit pieces. Starfruit releases water. So, cook until all the water evaporates and the star fruit has become soft. Turn off the flame and let the cooked star fruit cool down. In a mortar and pestle, grind the fried green chillies and garlic cloves into a coarse paste. Then grind the cooked star fruit into a coarse paste. Mix together the ground star fruit, ground chilli and garlic, salt and chopped coriander leaves. Serve along with rice or roti.
Note:
If the star fruits are too sour, you can add a little shredded fresh coconut while grinding.
