Ingredients:
Mutton (small pieces) – 750g
Chilli powder – 3 teaspoons
Salt – as required
Turmeric powder – 1 teaspoon
Garam masala – 1 teaspoon
Pepper powder – ¾ teaspoon
Ginger garlic paste – 3 teaspoons
Coconut milk – ½ cup
Lemon juice – 2 teaspoons
Raw papaya paste – 3 teaspoons
Coconut oil – 2 tablespoons
Method:
In a large bowl, mix together the chicken pieces with chili powder, salt, turmeric powder, garam masala, pepper powder, ginger garlic paste, coconut milk, lemon juice, raw papaya paste, and coconut oil. Marinate for 7 hours without refrigeration. Then prepare some hot coals in a cob oven. You can make the hot coals by lighting logs or with coals. The hot coals should be more in quantity so that they will last until the mutton cooks. Take 4 barbeque skewers and grease them with coconut oil. Skew the marinated mutton pieces into the skewers. Take a grill and grease it with coconut oil. Place the grill on top of the hot coals. The grill should not touch the hot coals. It should be about 2 inches higher from the hot coals. Place the skewed skewers on top of the grill and close the cob oven door. Keep turning the skewers once every 5 minutes. Let them cook until the mutton pieces become soft. It takes about 30 - 40 minutes to cook, depending upon the tenderness of the meat. Once cooked, remove them from the oven. Serve hot along with salad.
