Traditionally, Ugadi Festival is celebrated to mark the New Year in many states of India.
This festival is known by different names in different states. In the state of Andhra Pradesh, it is called ‘Ugadi’. Every state has its own traditional dishes to celebrate this festival.
Ugadi Pachadi is the most important traditional dish made on Ugadi festival in the state of Andhra Pradesh.
Ugadi Pachadi consists of 6 flavors - Sweet, Sour, Bitter, Piquant, Salty and Astringent.
It is a symbolic reminder that one must expect all flavors of experiences in the coming year and make the most of them. As such, it signifies that life is a mixture of happiness, sadness, anger, disgust, fear and surprise.
This Dish also has several health benefits.
Ugadi Pachadi is the first dish offered to deities on this day, after which it is consumed by devotees as Prasāda (blessed food).
Ingredients:
Bananas (fully ripened, medium sized, about 650g) – 9
Jaggery – 2 teaspoons
Neem flowers – 4 teaspoons
Fresh Coconut (chopped into small pieces) – 2 tablespoons
Green Mango (peeled, and chopped into small pieces) – 3 tablespoons
Salt – 1/4 teaspoon
Green chili (Finely chopped) – 2
Roasted gram / Vepudu Senagapappu – 2 teaspoons
Tamarind – 2 inch piece
Method:
In a small bowl, soak the tamarind in a teaspoon of water for 10 minutes. Then, squeeze and extract the pulp. In a large mixing bowl, add peeled bananas and mash them into a coarse paste with your fingers or a fork. Then, add jaggery, neem flowers, fresh coconut pieces, green mango pieces, salt, chopped green chili, roasted gram and tamarind pulp. Mix everything well with a spoon. Serve immediately.
