BANANA MUFFINS

Ingredients:

Whole wheat flour – 2 ¼ cups

Ripe bananas – 4 medium

Eggs – 2

Vanilla powder – 1 teaspoon

Coconut oil – ¼ cup

Jaggery – 1 ½ cups

Cinnamon powder – ½ teaspoon




Method:

Peel the ripe bananas and grind along with jaggery into a fine paste. Beat egg whites and yellows separately. Then mix egg whites and yellows, whole wheat flour, ground banana and jaggery, vanilla powder, coconut oil, and cinnamon powder together. Beat well without lumps. Pour the batter into muffin molds and bake.



Note:

The whole wheat flour should be sieved before using for baking. Over a broad plate or a bowl, add flour into a thin cotton cloth or Fine-mesh sieve (A sieve is a circular gadget with a finely-woven mesh net used for sieving flour or rava ) and tap the side with one hand. After sieving the flour, the particles left on top of the cloth or sieve should not be used for baking.
