'Kandi' means Toor / Pigeon pea in Telugu. 'Podi' means powder. Kandi Podi is a traditional Andhra Pradesh recipe, which is served with hot rice and coconut oil.
Ingredients:
Toor dal (split pigeon pea) – 1 cup
Urad dal (split black gram) – 1 cup
Chana dal (split Bengal gram) – 1 cup
Cumin seeds – 2 teaspoons
Kashmiri dry red chillies – 50 gm
Salt – as required
Coconut oil – 2 teaspoons
Method:
Take a kadai/pan and dry roast toor dal, urad dal, chana dal, and cumin seeds separately until they turn slightly brown in color and a nice aroma arises. Then, pour coconut oil into the same pan and roast dry red chilies until they become crispy. Transfer all the roasted ingredients to a broad plate and let them cool down. Then grind all the roasted ingredients together into a fine powder. Then add salt to the Podi / powder and mix well. Store Kandi Podi in an air-tight glass jar. Serve Kandi Podi along with hot rice and coconut oil.
